The Tri-Tip is the tip of the Sirloin weighing about 2-3 lbs.  We use only choice grade Tri-Tip

We season it and barbecue it until it's tender, then slice it really thin across the grain and pile it high on your plate... So tender; you can cut it with a fork!

The Chicken is barbecued for at least 2 hours, until just the right tenderness has been achieved.
